Tony Foreman: Wine Consultant


Tony is the founder and co-owner of some of Baltimore’s finest restaurants. He personally researched and developed the wine list for each restaurant and has been instrumental in menu development as well. His front of house staff is renowned for being thoughtful and unobtrusive, recognized time and again for superior service. The combined staff of over 300 employees has been a major driving force in putting Baltimore on the map in the world of fine wines and dining.
Foreman’s first venture was Savannah, which he started with his business partner Chef Cindy Wolf. It opened in Baltimore’s Fells Point in 1995. Savannah transitioned to a new location re-opening to what is now Charleston, Baltimore’s premier fine dining establishment and the only Forbes Four Star rated property in the entire state of Maryland. Petit Louis Bistro, a French restaurant in Baltimore’s Roland Park was Foreman’s next creation. Petit Louis is inspired, amongst others, by Bistro L’ami Louis in Paris and creates a convivial neighborhood restaurant renowned for its authenticity and superior service.
In November 2001, Bin604 was added to the portfolio; an innovative wine shop in downtown Baltimore, that was named Best New Wine Shop in the Country by Food and Wine magazine in 2002.
In December 2004, PAZO opened to great fanfare. This magnificent downtown restaurant and lounge serves the flavors of the Western Mediterranean in a stunning converted 1880’s machine tool shop. PAZO opened in December 2004 to rave reviews in both local and national press. PAZO has become a destination for both casual diners seeking to explore a new experience, and business diners demanding state of the art AV in a private dining suite.
Cinghiale (ching-GYAH-lay), which means wild boar in Italian, opened in late September, 2007. The restaurant celebrates the richness and style of the modern Italian table. Designed as a gathering place, Cinghiale is located in the center of downtown where everyone goes to meet over business or social occasions. Inspired by the energy of the late 50’s and early 60’s in cities like Milano and Bologna, Cinghiale has a lively urban bustle in the Enoteca, and a relaxed, elegance in the Osteria.
